Here's a good one for any of you with a bucket of black beans!
1 cup dried black beans, cooked and drained
2 Tblsp. mayo
1/4 cup chopped cilantro
1 Tblsp fresh bread crumbs (I use my little food processor and 1 piece of toast)
1/2 tsp. red pepper sauce
1/2 tsp. cumin
salt and pepper
-In a lg. bowl, using potato masher or fork, mash beans with mayo leaving some lumps. stir in ingredients cilantro thru pepper
-with floured hands shape into patties
-Cook on oiled skillet about 3 min each side
-serve with pitas, lettuce and salsa

Hello mamas. I mentioned this teriyaki chicken to some of you today and there were requests for the recipe, so here it is. Totally simple, and nothing new necessarily, but for me it was a good reminder of another way to prepare chicken other than roasting. My boy ate it up!
